I have a number of Linux machines with digital I/O in automotive plants.
We are currently using three different forms of I/O:  

Opto22 via Pamux
Opto22 via Ethernet (10/100BaseT)
Modicon Momentum (PLC) via Ethernet (10BaseT)

All of the options shown can be configured to meet your needs up to some
rather large number of I/O points both digital and analog.  The sample
rates might not be sufficient.
