Do a custom install. That way you make sure you get what you're after,
for example I never install X on a server.
I MIGHT throw in the necessary files to start up and throw an X session
remote but never to do it locally, X takes juice unfortunately.

Do a 32MB /boot, use maybe 1GB /, maybe 1GB /usr, take 1GB for /var
(logs, etc),
make /tmp whatever suits you best, use 512MB for swap and the rest for
/home as I gather your users will have files in their home directories ?
That leaves 5GB for /home, which depending on what you're after, should
be enough.
