A couple of other things to check:

Do you have a swap partition and is it activated?  run 'free' and see if
any swap space is listed and/or used.  A friend has 6.0 installed on one of
his machines and for some reason there was no entry for the swap partition
in /etc/fstab, so it didn't get activated at boot.  I'm not sure if it was
human error or something in the install routine that did it.

How much RAM is in the box and how much does squid have access to?  Check
the 'cache_mem' setting in /etc/squid/squid.conf.  Remember that this
variable is only a baseline setting - squid will grow to consume 2 - 3
times as much RAM after its been running awhile.  You may need to put more
RAM in the box or reduce the cache_mem setting.
