Hey Chris, I have done (several times) what sounds like you need to do shortly. The coolest project that I did was server recycling. The company that called me was running into a luxurious problem - their business was growing 200%+ faster than predicted. Their DB2 Database servers were severly under sized (hind sight is 20/20) and were too new to write off.
They bought a new - huge - monster for a server and we moved the database to that machine. We then used the ex-database server, plus a couple of extra hefty HDD's in a RAID 5 configuration and set up RH7.3 with Apache for the intranet, and Samba for file and print services (home drives and profiles are stored here), and does it's own backup every night at 02:00. That server has been running almost 450 days non-stop with only one 1 hour down time 2 weeks after the install to swap out the tape unit after it ate 2 tapes - two nights in a row. This server has it pretty easy and does what it is supposed to do without breaking a sweat.
