When you click on an URL, when you double-click a file in nautilus etc.

It says what applications can handle a mime type and, indeed, it might
specify a default application. I think in the future this will be a
system-wide setting. Preferred applications may be set by each user and
they have top priority. See mime-spec at freedesktop.org for more info.
