Steve, When you installed postfix it copies your /etc/localtime to /var/spool/postfix/etc/localtime to fix this copy /etc/localtime to /var/spool/postfix/etc/localtime and restart postfix you should be fine. Anytime you change your timezone or resolv.conf files you will need to update postfix. However you could just make a symlink to those files as well.
