You don't actually need X running on the server, just the applications and required libraries. You can then use ssh to log into the server and simply run your application. The remote PC's will of course need X running. There are a couple of advantages to this 1) you only need port 23 open 2) the server saves a bit of RAM. Alternatively, you can run X on the server and enable XDMCP (run gdmconfig to set this option). On the client you can then run "X :1 -indirect <server>".
