Great questions Ben.  Kudos to you for asking. 

As has already been said but in my opinion is without a doubt the most
important, keep all installed packages updated and run a fairly recent
version of redhat (assuming that is what you are running since this is
after all a redhat list).  Not to say that you need to upgrade to every
version that comes out, but the older ones do not get supported for
ever.  

Next, disable unused services like bind, apache(httpd).  I usually use
rpm to remove these since they can get started by accident (rpm -e
packagename)

Use at a minimum the redhat firewall tools to set up at least a
rudimentary firewall to keep the bad guys out.

check your logs every now and then for unusual stuff.  This should get
you started.

There is lots of documentation provided with your redhat distro.  more
on the redhat site. with the installation guide, reference guide and
customization guide

will get you to the docs for your version.

Last stay subscribed to this very busy list.  You will learn a
considerable amount by at least skimming all messages.

Don't be afraid to ask questions after doing the preliminary research.
Trying to get something working and reading a bit will allow you to ask
more specific questions that will have a better chance of garnering a
helpful response.
