Under RH8.0, it is a step by step process, first checking for updates, click then downloading updates, click then installating updates. I believe it will only rewrite these file which required to update, not something else.(I also believe they will be named xxx.oldrpm) Also there is an option in RH network agent that allow "RPM rollbacks" .
