Funny, I'm doing the *exact* same thing today.  :)

I did a google search and found a post where someone said that the 
LABEL=/ thing is only supported with some funky patch.  So I just changd 
that line to read root=/dev/xxx  (the device of my root filesystem).  I 
first tried to point it to where the /boot partition was mounted but it 
kept complaining that it couldn't find init, so I just pointed it to the 
main filesystem and now it's booting up fine.  I'm not in the process of 
compiling it again to get my damn USB mouse to work since I can _never_ 
get it to work on the first try.  :)
