Funny, I'm doing the *exact* same thing today. :) I did a google search and found a post where someone said that the LABEL=/ thing is only supported with some funky patch. So I just changd that line to read root=/dev/xxx (the device of my root filesystem). I first tried to point it to where the /boot partition was mounted but it kept complaining that it couldn't find init, so I just pointed it to the main filesystem and now it's booting up fine.
