I am in the same boat you are. Here are just a couple of things you could start with:
1. I would suggest that you start by learning basic commands and what they do such as looking in the /usr/sbin directory and entering man commandname . Then try to use the commands properly without destroying your system.
2. You could attempt to install an RPM package to see how nontrivial it can be. You will probably find a lot of failed dependencies that will cause an installation to fail. You can also try to build binaries and discover that there are source errors that require fixing.
I wouldn't try to run in Linux before you can crawl. Forgive me if you fully understand Linux, but there is far more to understand in Linux than Windows and you must fully understand how things work.
