I front-end my exchange server with a linux based sendmail+spamassassin
server. My exchange server does the virus checking.

Since there are multiple MTA's and scanners available that can front-end
your exchange server, I'm not aware of any single install document that fits
your needs. If I were in your shoes, I would probably start by selecting an
MTA (sendmail, postfix, exim, etc...). Then proceed with reading the
selected MTA documentation on how to implement a third party scanner like
Spamassassin and/or Virus checkers.
