There is a reasonably good DNS Howto at http://sunsite.unc.edu/LDP . The
definitive document on BIND is the Bind Operator's Guide (BOG), which is
included with the BIND sources (install the .srpm off of your Red Hat CD).
An up-to-date copy of the BOG is also online at http://www.isc.org .
Finally, O'Reilly & Associates has a book on the subject. See
