Okay, I see, there is no really "easy" way (I was wondering whether I
can set an environment as default for new created variables). Is there
any difference if I call

myenv$myvar <- 10
or
assign("myvar",10, env=myenv)
?

No. And with(myenv, myvar <- 10) is also the same. However, you do have
to be careful with
with(myenv, myvar <- x) vs. myenv$myvar <- x because it might be
different "x".

It's a little unfortunate that

with(myenv, myvar <- x)

works when myenv is an environment but not a list, while

mylist <- within(mylist, myvar <- x)

works when mylist is a list but not an environment. Is this something that should be fixed?
