The specific error message you are getting says that there are non-ASCII characters in one of your .Rd files. You can locate them with the tools::showNonASCII function.
library(tools) ?showNonASCII Replace them with ASCII characters and the packaging should work. If you really need the non-ASCII characters see the "Writing R Extensions" manual at system.file("../../doc/manual/R-exts.pdf") and read the sections on Encoding.
