Both of these are Windows applications. While you can install and run Windows on Qubes it frankly adds another level of complexity when it comes to installing it. A quick search reveals that there are both several OCR solutions as well as a multitude of CRM software that can run on Linux. If I understand you correctly you haven't even installed Qubes OS yet. That can be a major undertaking depending on your hardware. It's great that you want to use Qubes and people here for sure want to help you get there. Maybe it would be a good first step for you to choose a laptop and install Qubes, then setup some qubes/domains and install the software you need -- I am pretty sure there will be a FOSS solution for most if not all your needs. Based on that expirience you could then make a decision whether it's right for you. I don't think trying to plan out everything in advance and then just jumping in on day X will make you happy at all. So if you are a private person currious about a reasonably secure OS, by all means dive in but don't expect to be at home and productive immediately. Don't do this on your main machine you need for work! If you are a business and this will be mission critical, please look for and hire someone in your area that is already familiar with Qubes and can get you over the initial difficulties and train your people.
