I managed to accomplish the renaming using a pacmd script run at login.
It works, so it's definitely no showstopper, but it would be nice to
have a GUI front-end for this.

To get this working you need the "history" branches of PA and
PAvucontrol from my git repo here:
http://colin.guthr.ie/git/
You then need to make sure you load "module-device-manager" in your
default.pa.
