Besides what Rémi already pointed out you also get much better support for stuff like the stream names. If you use gst-pulse it will automatically extract meta info like id3 tags from the stream and use it to name the stream after the song title in the pa server. Then, pavucontrol can show you the stream name properly. And there are a couple of other reasons like this one why you definitely want to use gst-pulse instead of going over alsa.
