If anyone could enlighten me why my idea doesn't work as intended,

services and without having to run two separate Postfix instances,

you search for a complex solution and avoid one simple: two separate
Postfix instances.
Multi Instance Setup is not as hard and has one huge advantage: simplicity.
Each instance need minimum adjustments for exactly one job without
impact on the other job ...
Give it a try!
