You can also comment every share/doc/difftastic/fonts/ entry in pkg/PLIST
=> no need to patch manual/book.toml file to remove fonts.
Setting copy-fonts = false in book.toml also prevents links to
fonts.css, so the generated documents do not even try to load them.
Seemed to be the overall cleaner solution to me.
