I'd suggest a tweaked FVWM UI with only the features she'll really need. You can add some odd keystroke or something to get to a terminal so you can do whatever you want (eg: C-S-r to get a "run" box, or something like that). Ubuntu et al. may be "simple" in comparison to many things, but there's ample opportunity for confusion. FVWM can look plenty nice, and it can grow as she is ready for new things (you can add applications to a button bar, for instance).
