I'm not sure what the question is asking (almost certainly my fault for
not understanding), but I checked with the configuration editor and the
app/evolution/mail/display/fonts properties monospace and variable are
correct and use_custom is selected.  The fonts used by Evolution are the
ones specified in the "Appearance Preferences".  As far as I can tell no
other fonts are involved.
