That has nothing to do with Evolution, the dependency is the opposite. Please reassign to the package removed. Anyway, I think the concerned package will be a meta-package which you are free to remove if you dont want it. GNOME include a mail reader which is Evolution, so it brings it with it, and yes the “GNOME” package then requires Evolution. But other than that, you can remove it without problem.
