Very simple sample:
                // Send a mail to [EMAIL PROTECTED]
                $headers = "From: \"Webmaster\"<[EMAIL PROTECTED]>";
                $mailtext = trim($_POST["email"]);
                $mailtext .= " is joining the family.\n";
                mail('[EMAIL PROTECTED]', 'New Registration', $mailtext, 
$headers);
I am using the "fake sendmail" windows tool.... very simple to configure, 
maybe a bit slow though.
