I don't know whether US banks/credit card providers offer a service to turn off contactless. And I doubt that many issuers are going to offer contactless cards since everyone wants contactless payment now … less chance of spreading diseases that way … and it always costs money to keep separate products avialable as choices.
Quite a few places I go to are not even taking cash nowadays, for the same reason. Simplest thing to do is to keep your OMNI card separate from your credit/debit cards, and keep the credit/debit cards in an RFID-blocking sleeve, IMO. My little Bellroy wallet has the RFID-blocking material built into it; I use my phone to do most of my purchase transactions anyway nowadays.
