Thanks, P.J. Fortunately, I didn't have to go that route. As Steve pointed out, 
there is an option for setting the size of the image sent in Apple Mail after 
all. 

A while back I checked out some alternatives to Apple Mail. I don't remember 
why, and I remember the name of only one of the clients I 
tried---Mailsmith---but I retreated to Mail pretty quickly. Glad I didn't have 
to go looking again.
