Haven't gotten a chance to test my theory yet, but I'm pretty certain
that they DO involve using the self-timer and one more piece of
equipment.

IMHO the hard part isn't being in the air when the shutter goes off,
it is how to look so relaxed/floating at that moment. I'm sure she
takes multiple shots of each set-up and chooses the most relaxed
(floating/flying-looking) to show. It's not half as impressive of a
shot if you look like you are really exerting yourself when the
shutter fires.
