Assuming that the lens has no electrical contacts and is therefore a plain Kmount, go into "custom" menu, scroll down interminably to "aperture ring allowed" and set it to "permitted" - 2, I think. In _manual_ (M) mode, you can set the desired aperture, then press the (different on most models) button to stop it down and set the shutter speed. Repeat as required.
