Blessed are the pessimists, for they have made backups.

It's not a backup until there are at least three copies, at
least one of which is somewhere else.

Two copy backups run into problems with "bought the hard drives the same
day; why look, they died the same day, too!" and similar nightmarish
occurrences.

(In a former life, I worked user support in a university; every year,
ten or so people didn't graduate because they didn't have a backup of
their thesis.  Makes an impression.

The specific technique works a whole lot better if you stick the drive
in an airtight bag before it goes in the freezer; hard drives are not
sealed and freezers are generally pretty moist.)
