Mate of mine has some recently expired (ie 2008) Epson R2400 cartridges.

What's the lists thoughts on using expired ink? And what exactly goes "off"?

As the ink ages, it can dry out and prove unreliable in use. But beyond due date, if only a few months, shouldn't be a problem.

I had a printing project today for an exhibition I've been accepted into. Printing to 13x19 inch Velvet Fine Art ... $3.50 a sheet. First time I've had any problems at all with the R2400. Ultimately it turned out the Matte Black ink cartridge was failing, but it wasn't clear what was happening and cost me something like ten sheets of paper trying to suss it out before the cartridge went belly up and lit its replace light.

These four prints are the most expensive four prints I've made in four years!
