For the daytime sunrise/sunset shots, I'd go with Fuji Provia 100F.
Nice saturation, decent contrast, very easy to scan. You could use
Velvia too. The slides will look very nice, but they'll be a bitch to
scan.

Not sure what to recommend for the nighttime shots. I've used Fuji NPL
negative film before, but I was making prints out of that, and I
believe it's been discontinued.
