I honestly can't say, as I've never shot fireworks with NR off.

I did some night time shots with the *istD (early on when I first got
it), with NR on & off, & based on the results I decided to always
leave NR on.

Due to the way the NR is done it's twice the original exposure time.
For example if it was a 10 second exposure, with NR on, you have to
wait 20 seconds. As the camera makes a second exposure to "map" the
noise.

I think it's mainly about saving time. There is a lot going on during
a fireworks display, and the scene is constantly changing. Most people
don't want to miss a shot while the camera does it double exposure
noise reduction thing.

I have to add that I've never gone out looking to shoot fireworks, I
just happen to live somewhere that I can see them from the front yard
regularly. I never remember that they are going to be on, so it's
always a mad rush to get everything set up in time. :-)
