You can set a control point only so far distant from the existing curve line in the default configuration. I find it better to click on the line and drag it to where I want it. That creates the control point and adjusts the line in one action. Click within a near distance to an existing control point, the click will sometimes grab the existing point.
You can also click the option for "freehand" control. Then you can draw the line whereever you want. This gets tricky ... practice with the defaults first.
