What exactly do you mean by "the meter seems to be all over the place?" Is the exposure jumping around while reading the scene? Or is the same scene exposed differently when shooting? Are you using (M)anual on the mode dial, or some other function? Is "AE-L with AF locked" set to 2 (on)? Is the camera set to spot or center weighted metering?
You really need to be clear and specific as there are many ways to set the camera.
