For the former, I use a script that I designed for Photoshop CS2. It adds
a text layer with drop shadow, presenting the copyright data, as seen in
the lower corner of this image:

It can be applied to a batch of images using the Automate features of
CS2.
For the latter, I use Bridge ... select the bunch of photos I want to add
data to, edit it into the metadata panel, hit enter. Very easy.
