What Bob said, which is the way I do it, but just be careful of the logic, as sometimes it's non-intuitive! It was clearly written by a programmer. :-) Note, too, that you can set the rule up and then fine tune it by clicking on the rule and then the 'Options' button.

On the Tools menu choose Message Rules, then Mail...

A dialog box opens which 'your friend'* can use to set up the filters.
