well, if capturing screws up the phase, then everything looks weird.
however, i think still captures have that down pretty well. i can imagine
video capture having to play lots of tricks to keep up with the required
frame rate and to be compatible with broadcast video.

Another something with images is the "Kell factor." I believe it's an
attempt to quantify the perceived sharpness of a sampled image.
Representing the frequencies is important, but the phase of those
frequencies will affect perceived sharpness. I've run into that while
working with video captures.
