There's LOADS of good books. I came across a very nice one at a garage sale
in Ireland (3 Irish Pounds = 5 USD):
Andrew Hawkins & Dennis Avon: Photography. It even has formulas about Hyper
Focal Distance and much more.
Well - it is very old (1979) - but it's Brilliant (and Brittish). Perhaps
it's available at a library.

The first lesson in exposure could very well be this:
Photograph a black door - use the built-in meter default settings.
Photograph a white door - use the built-in meter default settings.

You'll end up with two IDENTICAL images: Two grey doors!
When you figure out why, then you know the first and most important thing
about exposure!

Most photography books I've read have not been very helpful, other than
being able to look at interesting pictures.

I would like to learn more about exposure, however.  Nuts and bolts
stuff, practical information.

Any recommendations for a good learning/study guide for this topic?
Bryan Peterson's book, some other?  A particularly good online resource
(that I can print out)? I know nothing can replace experience, trial
and error, but I would prefer some sort of guide rather than wandering
aimlessly...
