Here's how:
- In the File Browser, Edit Menu go to Preferences.
- Set the Custom Thumbnail size to whatever will fit on your screen comfortably ... I have a 20" Cinema format display, I set it to 768 pixels.
- Also set the "High Quality Previews" checkbox.
- Close the Preferences dialog.
- In the File Browser, collapse the Palettes display and enlarge the File Browser window to fill your screen.
- Go to the FB View menu and choose the Custom Thumbnail size.
Unless you want to convert a batch of files at once and then open them individually in Photoshop itself, this is good for viewing a collection of RAW files as large-sized previews.
(I learned this capability of the File Browser by reading "Real World Camera Raw".)

specifically do you do that?

In Photoshop you can use the File Browser for this, applying the RAW converter options to a set of similar photos, etc. The File Browser fires up Camera Raw in the background to produce the previews, RAW conversion will be simulated in the thumbnails, which can be sized up to a fairly large dimension based on your screen and the preferences you've used for the File Browser.
