For most casual shooting, full manual. I'll use aperture priority sometimes if I'm shooting in changing light. If I have the luxury, I'll use my handheld meter rather than the one in the camera. If I'm shooting a long lens (80-200 at the long end, or the 400), I'll often shoot shutter priority, just to make sure I've got enough shutter speed to avoid shake/blur. > 2.
