As usual, we are comparing apples to oranges. None of them both is better. 
They are suited for different customers. If someone would like to have top 
specified body, with good choice of ultrasonic driven and with IS (VR) 
stabilisation - then of course F100 is clear choice. But if someone looks 
for small, light and still rugged body with everything that is needed to 
take great photos - MZ-S could be better choices, and it has still some 
unique features, that you won't find in F100:
- mirror pre-fire
- real HSS flash (using FP in Nikon is the real pain in the ass...)
- real wirelles flash - Nikon has ordinary syncronization of external 
flash(es) with master - you loose matrix flash metering and you don't have 
any possibility to divide contrast between slave flashes, not to mention 
HSS or remote triggering of modelling light - all these features are fully 
implemented in MZ-S working with AF360 flashes. In fact you can even set 
different wireless channels for each photographer, who uses his own set of 
AF360's - that's of course impossible in F100
- leaving film leader out - I don't really know, why Nikon missed this 
usefull feature. And of course we don't have provision for midroll change 
(with auto advance to selected frame) in F100...
- nice MTF programm - just to match FA lenses performance - nothing 
special - but useful if want to perform sharpest photos just using 
programm
Of course, there are only a few professionals that uses MZ-S. But you 
can't just say that F100 is better for everyone. One of the 
professionalists, that uses MZ-S is German Photo Proffesor - Ralph Nobel - 
his words best describes MZ-S "it has as much features as it is needed to 
make great photos, and as little as it is possible". MZ-S is not a tool 
for sport and similar high-tech oriented photographers. It is just for 
photographers :-)
The bootom line is - F100 and MZ-S are different beasts - I wouldn't 
compare them just by technical parameters as you did...
