I've looked at the digital ZLR finders in the Fugi Finepix they work fine
for auto focus, (artificially sharpened for framing only in my opinion),
I'd hate to try to manually focus with one.

Not entirely. That is just one aspect of implementation of DSLRs to
date. The main point of interchangeable lens DSLRs is the ability to
change lenses. The use of an optical finder is merely the established
mechanism for showing a TTL image in SLRs to date.
There is nothing to say you could not have an electronic viewfinder and
get rid of the mirror/prism altogether. That way you could have DOF
preview without the finder going too dark to use it! Of course screens
would have to get much better for this.
But using a swivel screen with preview allows shooting over peoples
heads in a crowds, self portraits and all sorts of shots where it would
not be practical to use a viewfinder and previously you would have to
skip the shot or use guesswork.
There is no reason why you cant have both, and use whichever is
appropriate. Just because nobody has implemented it YET, does not mean
it is not possible, or desirable.
