Adobe's website has a truckload of documentation hailing the benefits of PDF technology - that would be a good place to start.
 
You're also on the right track with pdfzone.com and planetpdf.com - probably the best PDF topic websites I've come across.
 
I've also come across some articles around the web by typing "PDF forms" into various search engines.
