I'm not a lawyer but I've been told repeatedly that phone conversations may
be legally recorded as long as one of the parties knows that it is being
recorded.  Rather silly when you really think about it.

Most modems are accompanied by a CD with such software. Practically all
these applications offer an option to save the incoming call on the disk
as a wav file.
