I tend to use insert+space, s to turn off speech before starting a recording. If forms-mode opos are an issue, I could turn off JAWS entirely, disable them temporarily, turn off auto-forms mode, or switch to NVDA and deal with the sounds there. Turning off JAWs speech has thus far sufficed.
