It appears as though the configure script for Pan may need some tweaking. It did not auto-detect the architecture of my system (64-bit Athlon) and would only compile once I installed the i686 version of gmime-devel.
I just checked and while I can't swear that it would have worked without the .i686 version of gmime-devel, I was able to get the tarball to configure when I specified --target=x86_64.
