I'd like my users to boot up and immediately be presented with the Windows login screen, not the freerdp login dialog. I'd also like to deny access to the linux desktop. How do I accomplish this.
The freerdp configuration _should_ be self-explanatory - maybe you are tripping over the default setting in "Protocol security".
If this is not the solution: Could be more specific about your setup - title of the dialog, version of the RDP server, which options you changed, etc.?
To fully deny access to the desktop you could also use the desktop application with XFCE Kiosk mode (besides autostarting and -restarting of the freerdp application itself).
