Just to update:

by adding to cn=config :

olcLogLevel: Stats

or loglevel 256 to slapd.conf

and with -d 0

and no other change to rsyslog.conf nor to journal.conf

I get all my connections, LDAP operations, results logged via syslog to
/var/log/slapd/slapd.conf
