Interesting. Bluetooth can transfer audio in gazillion different ways. There are audio profiles and codecs, it's a deep rabbit hole you can tumble down into. I remember I had to tinker with codecs when I got my wireless headphones working with my Devuan laptop. As for a car I wonder if you can update the firmware on your head unit. I assume you are up to date with Android on your phone.
