You can indeed! All the usual suspects (Corbin, Sargent, Laam, etc) will happily shape a seat for you.
You can also buy foam and seat material and try your hand at shaping your own. Somewhere online (I'm traveling today, don't have it at hand) is a guide on reshaping your own motorcycle seat.
